The Val d'Arly fruit cooperative
A cooperative called “Fruitière” refers to workshops in which farmers pool the milk from their herds to transform it into cheeses. For them, it's a great way to preserve rich summer milk for the winter by turning it into big wheels of cooked pressed cheese. The Val d'Arly fruit cooperative has existed since 1969 and collects milk from farms between Lake Annecy, Val d'Arly and the Mont-Blanc region.
In the heart of the Reblochon and Beaufort AOP areas, farmers more recently wanted to develop a new manufacturing workshop to offer you Raclette de Savoie IGP on the menu at our restaurant. Today, the cooperative brings together 80 milk producers in 26 collection villages and employs 70 passionate employees on the 3 production workshops. The activity also has an impact on our landscapes, the herds allowing natural maintenance of the mountain pastures and meadows that you have crossed to come to Frometon Chamonix.
Pierre Gay
For our exceptional products, we wanted an exceptional man. Pierre Gay has been passionate about cheeses since he was very young since he took over the cheese factory created by his grandfather in 1935 in Annecy in 1989.
His leitmotif: find the best products from small producers, which he then refines in his century-old cellars.
In 2011, he obtained the title of Meillère Ouvrier de France, which rewarded his work and his love for cheeses. The cheese wealth of our regions is a source of inspiration for him and he has put all his know-how and enthusiasm into selecting the noblest products that we offer you on the menu.
